ORDER!!!

Honey Lime Enchiladas
Ingrediants:
1.5 lbs pork or chicken, cooked and shredded
1/3 c honey
1/4 c lime juice
2 Tb chili powder
1/2 tsp garlic powder
2 (10 oz) cans green enchilada sauce
equal parts mixed together of:
shredded mozzarella cheese
shredded cheddar cheese
(or just 2 cups of the shredded mexican cheese blend bag)
3/4 Cup Heavy Cream
flour tortillas
Directions:
Mix together honey, lime juice, chili powder and garlic powder and then add to shredded pork or chicken. Let the sauce soak into the meat for about 30 minutes. Leave some of the sauce aside to pour over the top of the enchildas before baking.

Lightly spray casarole dish with non-stick baking spray. Mix heavy cream and green enchillada sauce together. Pour combined- sauce into pan to coat the entire bottom. Fill tortillas with shredded meat and desired amount of cheese. Roll and place in dish ontop of the green sauce.
Pour remainder of honey/lime sauce over enchiladas and sprinkle more cheese on top - don't be stingy! Bake uncovered at 350 degrees for 30 minutes. Then turn on broiler and place enchiladas nearer the top of oven. Let it broil until cheese is slightly brown and crispy. It is now time to WOW your family!!


This sounds so freaking amazing to me that I cant stop thinking about it lol. I may cave and just make it myself later this week and chuck something off our preplanned menu. If I KNEW for sure it was delish then I would make it for dinner tomorrow but since its a little bit "unusual" Ill save it for a trial and error meal where my guests dont leave sick to their stomachs lol!!

I was just going over the things I need to still "do" and I wont lie... slightly overwhelmed!!

1) Sand the dresser and paint it. Install new hardware (knobs).
2) Sand the night stand and paint it. Install new hardware (knobs).
3) Finish washing all the baby clothes and put up in closet/dresser
4) Hang floating black shelves on nursery wall
5) Put up wall paper border around nursery walls
6) Hang lamp in the middle of the nursery room ceiling
7) Get a small table light for the nightstand by the rocker
8) Get a "breathable" bumper pad for the crib
9) Set up changing table with necesities
10) Pack my hospital bag
11) Pack babies diaper bag
12) Make appointment at Westminster CHP to bring the carseat in to check installation
13) Finilize Adella's primary pediatrician over at HB Kaiser clinic
14) Hang black out curtains in Adellas nursery and in our bedroom
15) get batteries for all the crap that needs batteries
16) get our Costco membership
17) get the random stuff I still need (baby wise.)
18) finialize the baby announcement purchase and remember to send her stats asap.
19) send out my baby shower thank you cards
20) move our bedroom upstairs. lol.
21) make a bunch of freezable casaroles for when she is born and I dont want to cook
22) give the relief society our schedule for the meal drop off rotation (they offered lol)
23) deep clean the downstairs area and set up the bouncer/swing to get the dogs acclimated to the babies stuff being 'around' the house
24) contact the people about donated Adellas cord blood
25) Pay the fee to join our local LLL (la leche league)

There is a lot more I just cant think right now haha. Its all stuff that I can get done well before she gets here (I think lol) but just need to make sure I stay on the ball with it all.

Tomorrow I will list my hospital bag and diaper bag contents list so see what you all think about it and if I need/dont need any of the stuff.

    Patty Wong was Makalah's pediatrician in Kiser HB. She was pretty amazing, and Kalen actually liked her as a dr, so thats saying allot..lol

  2. Ill look into her. I wanted Dr Joe (who also happened to be my pediatrician growing up and who is also on board with parents choices to delay vaccines but he isnt accepting patients. BOO!
